Fin dalla sua creazione, il Consiglio si è adoperato nella messa a punto di metodi per l'analisi fisico-chimica degli oli di oliva e degli oli di sansa di oliva atti a consentire la distinzione tra diverse denominazioni e a verificare la genuinità dei prodotti.

 

CHEMICAL TESTING METHODS


The technological advances in fats and oils analysis  have been   accompanied by a growing awareness of the need for ever more  effective control   of the purity and quality of the olive oils that  are sold, especially on    markets where olive oil consumption is being  promoted. This moved the IOC to   invite olive oil chemistry experts  from its member countries to collaborate in   searching for methods,  particularly to detect fraud.


Since 1988, the chemists have  been meeting twice a year. Their work   has led to the adoption by the  IOC of olive oil-specific methods to detect seed   oils, desterolised  seed oils, olive-pomace oil or traces of halogenated   solvents, among  others.


The resultant IOC-approved  methods bear the reference COI/T.20 and   are listed in section 11 of  the trade standard.

METODI DI ANALISI CHIMICA

Con lo sviluppo della tecnologia analitica applicata alle sostanze grasse, e consapevole di quanto sia necessario un sempre più rigoroso controllo della purezza e della qualità degli oli di oliva immessi in commercio, specie sui mercati in cui si realizzano campagne di promozione del consumo, il Consiglio, con l'ausilio di esperti in chimica oleicola provenienti dai paesi membri, ha avviato la ricerca di metodi di analisi efficaci, specie per quanto riguarda l'individuazione delle frodi.

Dal 1988 gli esperti, che si riuniscono due volte l'anno presso il COI, hanno permesso al Consiglio di adottare metodi specifici per l'olio d'oliva, in grado di scoprire nel prodotto la presenza di olio di semi, olio di semi desterolato, olio di sansa di oliva e tracce di solventi alogenati.

I metodi adottati dal COI sono contrassegnati dal riferimento COI/T.20 e sono citati nella sezione 11 della norma commerciale.
