È la somma dei valori di sterilità parziali raggiunti durante il processo di sterilizzazione espressa in tempi di esposizione a una data temperatura di riferimento. Quando la temperatura di riferimento T r è fissata in 121º C e la curva z in 10ºC si ottiene il valore Fo per le olive nere annerite per ossidazione. Il limite minimo è fissato a 15 unità.
