Technique de taille qui favorise énormément le port naturel des oliviers. Les arbres ont un port buissonneux avec un tronc court et sont très rapprochés le long de la plantation en ligne de sorte qu’ils forment une végétation continue. Cette technique continue d’être utilisée pour constituer des coupe-vent, en général avec un cultivar en élévation.
