زيت كُسب الزيتون الذي يتم الحصول عليه من خلال زيت كُسب الزيتون الطبيعي بواسطة تقنيات تكرير لا تتسبب في إحداث تغييرات في بنيته الغليسريدية الأساسية. وتبلغ حموضته الحرة معبر عنها في حمض الزيتيك بحد أقصى 0.3 غرام لكل 100 غرام وخصائصه الأخرى متوافقة مع تلك التي حددتها لهذه الفئة مواصفة المجلس الدولى للزيتون (COI/T.15/NC رقم 3).
