Calibración de las aceitunas según el número de frutos que entren en un kilogramo o un hectogramo, dando lugar a una escala de calibres o tamaños. Cuando se trate de aceitunas deshuesadas o rellenas (tras eliminar el relleno), el calibre que se indique será el correspondiente a la aceituna entera de la que procedan. Para verificarlo, el número de aceitunas deshuesadas que entren en un kilogramo se multiplicará por un coeficiente determinado por cada país productor.
