معايرة الزيتون وفقًا لعدد الثمار في الكيلوجرام الواحد أو الهكتوجرام، مما يسفر عن نسبة من المعايير والأحجام. عندما يتم التعامل مع الزيتون منزوع النوى أو المحشو (بعد إزالة الحشو)، فإن المعيار الذي يُشار إليه سيكون خاص بالزيتونة الكاملة مما ينتج. للتحقق من هذا، عدد الزيتون منزوع النوى في الكيلوجرام الواحد سيتضاعف بواسطة مُعامِل محدد من قبل كل بلد منتج.
