Machine equipped with stainless steel plates that uses the differences in the surface tension of oil and vegetation water to extract part of the oil contained in the olive paste. When the plates are dipped into the paste and withdrawn, they are preferably coated with oil because its lower surface tension makes it adhere more to the plates.
