ثمرة شجرة الزيتون القابلة للأكل، وهي بيضاوية الشكل وتنقسم إلى ثلاثة أجزاء: الجزء الخارجي رقيق وشفاف ويسمى (القشرة)، والجزء الأوسط لحمي ويسمى (اللب) والجزء الداخلي يمثل الطبقة الخشبية الصلبة المغلفة للبذرة ويعرف باسم (النواة).
