MADRID, SPAIN / 19.03.2025

This week on the Olive Health Information System website

The newsletter of the University of Navarra and the IOC dedicated to health

This edition of our newsletter addresses two essential aspects in the field of health and research. Firstly, it discusses the well-documented cardiovascular benefits of extra virgin olive oil. Secondly, it delves into the scientific and health implications of the extraction process and the management of its by-products.

The cardioprotective effects of extra virgin olive oil are attributed to its unique composition, particularly its monounsaturated fatty acids, such as oleic acid, and bioactive polyphenols, including hydroxytyrosol and oleocanthal. The synergy of these components helps reduce cardiovascular risk factors, including hypertension, dyslipidemia, and insulin resistance. Furthermore, extra virgin olive oil has been shown to improve endothelial function by increasing the bioavailability of nitric oxide. Its ability to modulate key biomarkers, such as LDL cholesterol and C-reactive protein, further solidifies its role as an essential element in dietary strategies for preventing and managing cardiovascular diseases.

On a different note, we highlight a comprehensive review on sustainable solutions for by-products of olive oil production. This review explores advanced treatment technologies such as bioremediation, membrane filtration, and advanced oxidation processes, which aim to treat olive mill wastewater. Interestingly, the study also highlights the economic potential of olive mill wastewater valorization, particularly through polyphenol extraction. These bioactive compounds possess antioxidant, antimicrobial, and anti-inflammatory properties, making them valuable for the pharmaceutical, cosmetic, and functional food industries. By integrating sustainable extraction techniques and circular economy models, olive mill wastewater can be transformed into a valuable resource, reducing waste and enhancing sustainability in the olive oil sector.
