زيت زيتون يتم الحصول عليه من زيوت الزيتون البكر بواسطة تقنيات التصفية التي لا تؤدي إلى حدوث تغيرات في اﻟﺒﻨﻴﺔ اﻟﻐﻠﻴﺴﺮﻳﺪﻳﺔ الأساسية. وتبلغ حموضته الحرة معبر عنها في حمض الزيتيك بحد أقصى 0.3 غرام لكل 100 غرام وخصائصه الأخرى متوافقة مع تلك التي حددتها لهذه الفئة مواصفة المجلس الدولى للزيتون (COI/T.15/NC رقم 3).
