Since the late 1960s the IOOC has been intent on disseminating scientific research findings by organising conferences on the health properties of olive oil, which have provided a meeting and discussion point for scientists. Such conferences have generated consensus statements on olive oil and health and have also focused on consumer education, looking into the best way of telling consumers about the biological, nutritional and gastronomic attributes of this product.
